Detox oatmeal cookies maybe I need to find a new name for this recipe because I know it sounds like an oxymoron right?? One should probably take a break from all cookies during a detox right? Or what are you adding to these “treats”. Stay with me! We are still on a high from the fun of the festivities (and several helpings of pie, cookies and sweets), my kids get crazy grumpy when I suggest we take a break from dessert or treats. Who wouldn’t right??
Oats, chia and flax to the rescue! Instead of saying we’re going to skip dessert, I offer them some healthier options. These”detox” oatmeal cookies are my solution to the kiddos dessert while still giving them a good dose of fiber, healthy fats and vitamins.
This is one of desserts or “treats” on rotation for the next few weeks and probably in the new year as well. A simple and quick to make oatmeal cookie that can be made with or without the chocolate chips. I made half the batch with Enjoy Life Chocolate Chunks (2-3 chunks per cookie) and the second half with raisins. These detox oatmeal cookies are full of fiber and no any added sugar, hence the “detox” idea. Still delicious and yummy but with a break from the sugar.
I love oats because they are a great way to add fiber to your diet and my husband still swears that oats transformed his healthy when he started on his wellness journey over a decade ago. I do have one twin who is not a fan of oats unless they are hidden in some kind of baked good. Little does she know that I use gluten-free oats or oat flour a lot in my baking. They lend a good consistency, are inexpensive and most importantly, help satisfy a growing little lady’s appetite in check. I swear their legs are hallow!! These oatmeal detox cookies do the trick. They are delicious and filling and I know they like them when they ask for seconds and to have one in their school lunch! That is a true sign of a winning oatmeal cookie! Given how clean these “treats” are I even let them have one for their breakfast Part 2 in the car on the way to school this morning…..yes, it was that kind of morning!! No guilt though because I know what is in them and I get bonus points because they think I am awesome for letting them have a cookie before 8am! Win-win situation! I am doing a happy dance!
Try them out!
Detox Oatmeal Cookies
Guilt free cookies that are so clean you can eat them for breakfast.
1 cup gluten-free oats
½ cup oat or other all-purpose gluten-free flour
1 tbsp flaxseed meal
1 tbsp chia seeds
1 tsp cinnamon
1 tsp ground ginger
½ cup honey
1 mashed ripe banana (or organic egg)
1 tsp vanilla
¼ cup non-dairy chocolate chips or chunks
Preheat oven to 350F. Line a baking sheet with parchment paper or lightly oil.
In a large mixing bowl, mix together the dry ingredients. Stir in the honey, banana or egg and vanilla until well mixed in, careful not to over stir. If too dry add in a splash of non-dairy milk. Fold in the chocolate chips.
Using a soup or cookie spoon, place a dollop of batter on prepared baking sheet, leaving an inch or one and a half inches between cookies. Place sheet in hot oven and bake for 20 minutes, or until the cookies begin to turn golden.
Remove from oven and place on cooling rack until cool enough to test out! Once cooled, place in an air-tight container or stash half in a second container in the freezer.
Makes about 12 cookies.
