I am not a big coffee drinker, tea is my jam, but sometimes I smell my husbands cup and I crave a little or there are definitely mornings when I need a little extra something to get me going in the morning. And a chocolate sweet treat….need I say anything about that? Hmm nope! These banging espresso balls cover all these bases. Naturally sweetened by the dates with a little protein and omega-3 kick from the walnuts plus the antioxidants from the raw cacao powder. Seriously why don’t I make these espresso balls more often?? I love to make a batch of two of my espresso balls, place them in a labeled container and store them in the freezer so I can grab a few when ever I need them. I do the same with my sunflower butter balls, carrot cake balls and protein balls which the kids can grab whenever they want a snack or something a little extra to keep them going.
With Christmas just days away, these espresso balls were made for that magical morning when already my early bird risers have historically woken up extra, EXTRA early to see what old Saint Nick has gifted them. Insert yawning emoji here!!
A raw, chocolately espresso ball treat that can be whipped up in minutes when you need a burst of energy and something sweet. Sweetened naturally by the dates and off setting the bitterness of the coffee and cacao. Great to have stored in your freezer to grab and go or serve to guests as an after meal treat.
1 cup medjool dates, pitted
1 cup walnuts (or almonds, hazelnuts, cashews, etc)
2 tsp cacao powder
1-2 tsp espresso or instant coffee powder
1 dash sea salt
1 tbsp shredded coconut or ground nuts for dusting (optional)
Pit dates then soften in water if the dates are hard. Place all ingredients (except the optional dusting items) in Cuisinart or food processor. Pulse until well pureed and mixture form into a paste. Using wet hands, roll mixture into golf-ball sized balls and place on a plate or freezer friendly container. Place in fridge for 15-20 minutes (or freezer for 5 minutes) to set. Lay optional dusting ingredients in a bowl and gently roll the balls in the toppings. Return to fridge or freezer to sit before serving. Should be stored in fridge or freezer in a covered container.
Makes about 14 balls.
