Quick Marinara

A quick and easy marinara sauce to make for pasta, pizza night or any time you need a quick red sauce.  We use this as our base for many sauces, adding in extra veggies, a protein or beans to make the sauce a little heartier.  See the NOTE section for easy ways to turn this into a thick vegan protein-packed sauce or a meat sauce.

Instructions
  1. Heat oil in a Dutch oven or large stew pot over medium heat. Saute onion in hot oil until it is translucent, or about 2-3 minutes. Add garlic and saute for an additional minute or until fragrant. Stir often to ensure no burning.
  2. Pour in tomatoes into pot then pour a cup of water into the can to get out any remaining tomato juice and add this to the sauce. Turn heat up to high and bring to a sauce to a boil. Then reduce heat low, stir in basil and season with salt and pepper. Let simmer for 20 minutes.
Recipe Notes

Option to add in a pound of cooked ground turkey or beef.  While marinara is cooking, place a large frying pan over medium-high heat and cook ground turkey/beef in pan and cook until meat is cooked through.  Drain fat then add meat to marinara sauce.   Let cook for an additional 10-15 minutes.

For a vegan option, add in a cup of crumbled tempeh or a cup of lentils into the sauce and let cook for the last 15 minutes. Or for a creamier sauce, stir in half a cup of hummus to the sauce in the last 5 minutes of cooking time.

Freeze left over sauce or serve leftovers over a bun as sloppy joe’s or on pita bread for pita bread pizzas.
