Sweet Potato Veggie Burgers

I love a good veggie burger. I am constantly tweaking recipes or creating new ones depending on what we have on hand or needs to be used.  This recipe is a great base that you can add your favorite spices too or top with your favorite toppings. Freedom to create your own masterpiece of a burger!   We have a surplus of sweet potatoes on hand so this week we are making Sweet Potato Veggie Burgers!  It’s different every time.  With the summer weather and we have burger fever!

Serve your Sweet Potato Veggie Burger on your favorite kind of bun, over a large leaf lettuce, slice it up into a wrap or under a fried egg. Sweet Potato Veggie Burger

  1. Preheat oven to 400F. Roast washed potatoes in the hot oven for 45 minutes or until they are tender. Remove from oven and let cool. Turn oven off.
  2. While the potatoes are cooling, mix together the remaining ingredients in a large mixing bowl. With a spoon remove the flesh from the sweet potatoes and add to the mixing bowl. With the back of the spoon or fork, mash the potato into the mix. Stir until well combined.
  3. Form the mixture until four patties and place on a parchment lined baking sheet. Place in the refrigerator for at least 30 minutes (or overnight) to chill. This helps the ingredients stick together.  
  4. Preheat oven to 375F. Transfer the baking sheet to the hot oven and bake for 20 minutes, flipping the patties at the mid point.
