Sweet Potato Veggie Burger
A great base that you can add your favorite spices too or top with your favorite toppings. Freedom to create your own masterpiece of a burger! Serve on your favorite kind of bun, over a large leaf lettuce, slice it up into a wrap or under a fried egg.

  1. Preheat oven to 400F. Roast washed potatoes in the hot oven for 45 minutes or until they are tender. Remove from oven and let cool. Turn oven off.
  2. While the potatoes are cooling, mix together the remaining ingredients in a large mixing bowl. With a spoon remove the flesh from the sweet potatoes and add to the mixing bowl. With the back of the spoon or fork, mash the potato into the mix. Stir until well combined.
  3. Form the mixture until four patties and place on a parchment lined baking sheet. Place in the refrigerator for at least 30 minutes (or overnight) to chill. This helps the ingredients stick together.  
  4. Preheat oven to 375F. Transfer the baking sheet to the hot oven and bake for 20 minutes, flipping the patties at the mid point.
